A lovely decadent sauce to liven up your pancakes or other desserts.
4 tbsp of caster sugar
1 zest and juice of an orange
60g butter
2 tbsp of just a splash of brandy
Orange segments from ½ an orange
In a small frying pan or saucepan heat the caster sugar on a medium heat until the sugar has melted and starting to brown. Add the butter and stir in. Keep on the heat and add the just a splash of brandy followed by the zest and juice of the orange.
Optional extra of adding orange segments to the sauce for a tangy hit. Pour or smother the caramel sauce over your pancakes.
